Cafeteria concoction... I work in a complex that has 4 cafeterias and a hotel (that has a restaurant) So I can usually find something that works. Today was a little challenging, so ended up with chicken parm, no pasta or bread, but roasted veggies and salad. Also inspired a coworker to skip the pasta and bread. It was delicious!
