I went overboard while watching the news.
Today's goal is to stay hydrated, stay calm, and to mindfully consume. I'm also going to plan to drink tea through the day, now that the temperature is dropping.
Dinner is Sloppy Joes, which I plan to really appreciate. I have no idea what sides yet... I'll come up with something.

I'm using a mix from Epicure. Prepared with lean ground beef, no bun, it's 290 calories per serving (1/4 package). I would like to experiment with lentils, but today is not that day.

It was pretty good for a mix! I've made them from scratch before - I'll see if I can find the recipe I used to use...

I went hunting around for recipes, and I think that overall, sloppy joes are pretty good if you use good beef and drain off the fat. I'd avoid recipes that use bbq sauce or ketchup in favor of tomato paste (or sauce) to keep the sugar down, but overall, they're half vegetables!
