Ahhh! I can't unbutton my jeans! (And, no it is not due to weight gain) I did a stellar job of cutting my thumb - leaving a nice meaty slab of flesh hanging near the left of the nail. Just lovely. And the place where the bandage is (and pain is), is right where pressure is placed when working on the button or zipper. After I guzzled a whole heap of water and later sped off to the restroom - imagine my bewilderment when it donned on me that I was in a pinch -- totally unable to undo my britches with my left hand - and really having to pee...badly. After doing the pee-pee dance and wrestling awkwardly with my "good hand" e v e n t u a l l y I was able to work on releasing the button. Guess I'll need to wear my elastic waisted yoga pants for the rest of the day.

The nasty cut and the frantic panic was all worth it when I tasted my new creation -- (during which the making of it caused me to mutilate my flesh). I just made the most incredible Low Carb Coleslaw.

I'm a Southern girl - and we in the South like our slaw...a lot. I've always been irritated that commercial slaw is always doused in so much sugar...as is the ready-made slaw dressing you can buy in the store to fix your own. So, I can't tell you enough how excited I am that I now have the most amazing slaw recipe E V E R! Lovely and LOW CARB, yeilding 2 grams of carbs, a decent amount of fiber and one gram of protein. And it tastes so good it'll make you want to slap your momma.

Here's the recipe if anyone wants it:

Evie's Low Carb Coleslaw - worthy of her blood, it's so good (LOL)

1 head green cabbage
1/4 sweet red onion
1 small carrot, shredded

1. Reduce your cabbage to little bitty shreds and put those in a great big bowl.
2. Mince the onion and carrot really fine and toss with the dressing
3. Admire and enjoy!

Dressing:

1/2 cup mayo
1/2 cup sour cream
1 Tbsp apple cider vinegar
1.5 tspn prepared mustard
1 tspn salt
1 packet artificial sweetner

Note: The slaw is very colorful. While the carrot is a bit higher in carbs there is just a very small amount in this recipe, more to add color, as garnishing. If you leave the carrot out your serving will yeild 1 gram usable carbs.

It is AWESOME!

Sorry about the finger! I'm not a big fan of prepared slaw. In fact, I thought that I just plain did not like slaw at all until I tasted on that was homemade....wooo-wee, that stuff is good! :) So, this recipe sounds awesome. Thanks for sharing! :)

Homemade dressings are always the best way to go. I rarely use bottled dressings because of all the sugar...what is up with that anyway?? It is so unnecessary!!

Oh my, all your recipes are awesome, and I always incorporate them into my diet...my to give blood over this...! Yikes...! Poor dear. I so hope that heals quickly. Sounds amazing, and will definitely try. If you don't mind I may peep at your recipes just to get serving amount..:)...Don't sweat the yoga pants..there is something to be said for comfort, especially when elastic is an elective and not required....:) Much love my friend...thinking of you. Hi Raven! Glad the recipe will be a winner for you. The serving size is one-half cup, as the standard serving size for most veggies. My was pretty bad - deep...so I am still treating my hand gingerly. It's been kinda funny anticipating what I will need help w/ since I can't use that thumb at all. Hmmm...How to hook my bra, use my curling iron, put on hosiery - Looks like Sunday morning at my house is gonna be interesting! LOL

Hi Cindy! Glad you back on FS - I missed you SO much! Hope you and Cliff are well and enjoying your weekend together. Glad you are happy to have the recipe. Keep in mind that the dressing amounts I give will provide just a light covering over the veggies, which is how I like it. Some ppl like the slaw more soupy w/ a lot of the dressing. If that is the case, simply double the dressing ingredients. This is a giant batch - serves 10. Please let me know how you like it!

Hey Evie - haven't been by your journal much, and look...you went and hurt yourself! Praying healing prayers over you and your thumb!!! :( But I must say I love homemade coleslaw! And typically I make it very much like yours, but I usually add celery seed. Outside of that...about the same. And YUMMO! (oh, and btw, my hands / and my husband's hands ... are turning silky smooth :)))))) Thank you!!! I've been using it on my new scars too! :) and some old stretch marks from kiddo's!
