Thanks for all the positive comments about that steak! It was 5 days in the making using a technique called dry brining. Just salt each side of a steak, put it on a tray in the fridge for 5 days uncovered, turn it 1x a day. Osmosis draws the salt deep inside the meat, seasoning it, drying it, tenderizing it. And the cooked product is so juicy and full flavored.
