So I was just wondering, I'm very ignorant, when it comes to cooking. I had some very delicious Menudo, which is made by Mexican food places and restaurants here in L.A.. Would lentils soup be somewhat like Menudo? Have you ever had Menudo, my wife gets sick just looking at it. lol

Oh warren, I see tripe is in the recipe! I would be the same as your wife! lol. Maybe tripe is good to eat but I couldn't do it. At first from pics I thought morels were being used then I read the recipe!

Spaghetti night in our house means pasta for non-veggie eaters. I love spaghetti squash, so it's easy for me to eat that instead. One of my favorite ways to eat it - sear 2 chicken tenders with Mrs. Dash Italian blend and a tsp of olive oil. After the squash is cooked. I cut the chicken tenders up and mix with about a 1/4 cup of my favorite spaghetti sauce, lay that on top of the squash and sprinkle with about 1 tbsp of Parmesan cheese. Very Yummy!

Funny, I googled it too. Like bean soup. Menudo is like a special soup here that Mexicans love. Kind of expensive and a bit difficult to find.

God I feel the same way. Weekends means laziness for me sometimes. (and poor planning) I am more on schedule and rigid during the week which helps my eating

I would give my eye teeth for some real menudo. I'm from SoCal but I'm in Northern Illinois. Can't find good menudo to save my life.

Menudo is a Mexican soup made with beef tripe and hominy. You dump in Mexican Oregano, dried cheese, Cilantro, and hot chilis to taste. Sometimes you get a knuckle in there too. Mostly served on Sat. and Sun. mornings. Great for hangovers.
