I had it in my schedule to do a run this morning, but my knees were still a little stiff from Monday's run. I've been thinking that I need to break up my runs with a couple of more days in between them to give my legs a wee bit of rest. I'm new at this and I don't want to damage myself. So, instead I did 55 minutes on the elliptical cross trainer and I was really surprised at how much that kicked my butt! I burned about 100 more calories in the 55 mins than when I do my running. Of course, the elliptical has resistance, so I'm sure that had a lot to do with it. I liked it a lot and I think I might make it my regular Wednesday morning workout.

I'm on day 4 of my "break the plateau" mission and I started craving buttered toast this morning. Really? I haven't had buttered toast in over 2.5 years. I've got celiac disease and I'm allergic to dairy. I think my body is saying that it wants fat and carbs. Well, body, let me tell you something -- get over it! We're on a mission and you'll just have to suck it up and get with the program.

I'm also back on my no unnatural sugars kick - I consider unnatural sugars to be artificial sweeteners, processed cane sugar, and HFCS. I gave them up back in May and it was only during Thanksgiving where I fell off the wagon - I even ate a bag of gummy bears. I had fallen far! And I'm trying to figure out how to make my Christmas cookies - yes, I am going to make gluten-free, egg-free, dairy-free, unnatural sugar-free cookies. I'm an ex-pastry chef these will be to my standards or I'll just have to make regular cookies that I can't eat. I think that I'm going to use coconut sugar as my sugar replacement. In sugar cookies...yes, this does sound insane even to me.
