Oh, goodness! I was having a craving for stuffed cabbage rolls after work today, but they are so labor intensive and take so long to make. So, I figured the trend these days is to "deconstruct" food, why not make it like a soup or casserole? That's what I did, omitting the rice that traditionally goes into the rolls, and making it a one-pot meal. All the great flavors and textures of the rolls, without all the fuss! YES! It turns out, I'm not the first to think of this. There are many videos on YouTube on how to make Cabbage Roll Soup or Casserole. It is seriously YUM! And, without the rice, the keto macros are right on point, if you use 75/25 ground beef and don't drain the fat. My mouth is happy, my tummy is full, and I have some left for later in the week when I don't feel like cooking. Win, win, win! Have a good night/morning/afternoon wherever you are.
