So, I was craving linguine with clam sauce after work today. Nope. I didn't do pasta, I made zoodles. I usually keep a couple of cans of chopped clams in the pantry, so I had everything on hand to make a keto-friendly version. I usually use fresh garlic, but since I eat so little, fresh goes bad before I can use a whole head. I have seen others use the chopped garlic in a jar, so the last time I shopped, I got some. It was horrible, and ruined the whole dish. Plus, I think the clams I used were from the Dollar Tree, and they were tough and nasty! I ate maybe 4 forks full, and tossed the rest in the garbage, along with the jarred garlic. Horrible stuff!
So, now I'm still hungry, not in the mood to cook again, and petulant. *pouts*
It's either hit up KFC for some grilled chicken (but they only grill the breasts, not the thighs) with green beans, or haul out the CarbQuick and make some keto pancakes with bacon and eggs.
Oh, if my fellow low-carb/keto folks don't know about CarbQuick, it's a LC version of Bisquick, and it's pretty darned tasty for biscuits and pancakes. You can also use it for breading or batter. 1/3 cup contains 16 g of carbs, but 14 of those are insoluble fiber, so it's 2 net carbs.
Well, I think I just talked myself into pancakes for dinner.

if you have a Trader Joe's around, they sell a small tray of frozen garlic cubes. No off flavor like the jarred type.

Thanks for the tip, susiesandb! We don't have a TJ's closer than 70 miles away, but we're hoping. Just got Whole Foods 2 years ago, so, maybe? :)

I use garlic like it's a food group all of its own. Amazing how spoiled we get when eating fresh - but in a good way.

What a bummer to prepare a meal and then have to chuck it out! If we're going to be eating less, it does feel like we deserve the best, eh?

My experience is that you take some real chances when you buy canned seafood at the dollar store. JS Thanks for the headsup on the CarbQuick!

Buy standard garlic, chop all the cloves and freeze it in portions in an ice-cube tray with a little water then pop them out into a bag to store. It keeps for ages that way and you can use it straight from frozen, even if frying.

I just throw whatever garlic I haven't used into a bag and put it in the freezer. I don't even chop it - by the time I've carried it from the freezer to where I cook it's usually defrosted and transferred the cold to my hand.

Even easier, Mini! I guess that with my (non-existent) knife skills, I don't risk chopping garlic that may be frozen

In the produce dept look for jars of Litehouse brand freeze dried garlic ... pretty yummy stuff. They have other freeze dried herbs and mixes such as basil, oregano, chives, cilantro, poultry mix, Italian mix, etc. https://www.litehousefoods.com/products/instantly-fresh-garlic

I was gonna recommend what phooka said. This also works for ginger and ginger and garlic mix. I threw out bolognaise after a couple of mouthfuls this week as it was made it's cheap fatty mince. I feel your pain 😁

@Fifi and Izzypup, I know, I know....LOL I've bought canned sardines and mackerel at the dollar store, and they've been fine, so I was hoping... Oh well, live, experiment and learn. @catzz2, I love those freeze dried Lighthouse products. I have a pantry full of them. I thought the jarred garlic would be closer to fresh, though.
