Experimenting with my new OXO mandolin. I have a standing mandolin but it’s from culinary school, 23 yrs ago, and could use a new blade...$55! This one is small, fits in a drawer, 3 thicknesses but just straight cuts which is what I do most of anyway. So, perfect for $15! Anyway, took a zucchini, sliced it up and seasoned it with EVOO and spices. Baked it at 350 until they browned. First batch was not horrible. Light as a feather. Interesting for a first try at this. 👩🏻🍳

In order to stay LCHF, I cooked 3 pounds of ground beef with 3 different seasonings. This way, if I want a ‘snack’, I am staying within my LCHF guidelines. I can pack small portions for work too.👩🏻🍳
