One of my all time favourite lunches! Packed with protein & low in carb if you’re looking for that! Iceberg lettuce, pepper, chopped jalapeños, 3 boiled eggs, 2 mini chicken fillets, topped with mayonnaise & sweet chilli sauce!

Haddock fillet with mixed veg & brown rice - didn’t have exact measurements for veg but around 350 calories! Was a lovely & filling dinner!

Just an idea... when I got into dieting & weight loss I watched a lot of YouTube videos. One suggested a progress chart. Having your starting weight & then your goal so you can cross off the stages & see improvement! It’s working great for me!
